Bison & Bourbon combines a nostalgic ambiance with unique eye catching dishes. Occupying a renovated 1920s-era warehouse, Bison & Bourbon focuses on a wide "Bites" selection, hearty entrees and provides an opportunity for others to join the ride.
In keeping with the building’s history and natural elegance, we carefully repurposed the original building materials from the 1920's to retain its authentic Prohibition-era charm. All of the tables indoor and outdoor are made from the original pine wood that the warehouse was built with in the 1920's.
191 7th Street between 2nd and 3rd Ave, we are in the heart of Park Slope, conveniently located right off of the BQE, and 10-15 minutes away from the most Jewish communities in Brooklyn, Queens & Manhattan.
Originally from Queens, Cyndi studied Culinary Arts at Johnson & Wales University in North Carolina earning her Associates Degree. Once returning to the Northeast, she attended Drexel University and obtained a Bachelor's Degree in Hotel and Restaurant Management. She worked with different restaurant groups such as The Madison and Firebirds Wood Fired Grill helping open restaurants up and down the east coast. After opening Bison & Bourbon as our executive chef, Cyndi is now the General Manager. She is striving to bring the very best in service and hospitality to the kosher restaurant industry. Following in the foot steps of our late general manager, Andrea Luca Rossi, Cyndi has a knack for making guests feel welcome when they step into Bison & Bourbon. She is currently working hand in hand with our talented mixologist and continues to bring the best cocktails in kosher. Her passion for food is still there and can be felt when talking to guests about the new menu or daily specials that Chef Jose Soto has created. Cyndi is still known as being a finalist on Fox's hit television show, "Hell's Kitchen" but has shifted her focus to working with our service staff and demanding excellence from them as much as Gordon Ramsay did from her.
Chef Jose Soto
José Edgardo Soto is a chef from Honduras but was raised in the Crown Heights neighborhood of Brooklyn. He began his career at the legendary Savoy in SoHo under Chef Peter Hoffman where he worked for Eleven years. Working through out the area at places such as Bobo Nyc, Norwood Club, Cubana Social, Baba, Le Barricou, Maison Premire, Frannys Brooklyn, Oznots dish, Back Forty West. His food is a natural evolution of the values of local, seasonal and natural ingredients. He prefers to create new dishes by letting the ingredients shine rather than engaging in trickery. The result is a cuisine of natural beauty and refinement that consistently draws enthusiastic diners. His greatest strength as a chef is that he never stops learning and growing. You will experience flavors and possibly discover new favorites that you would never have the chance to get to know if it wasn't for trying a dish made by him. In recent years he has been working as a kosher chef, notably at Basil in Crown Heights for 5 years.
